Champagne, France is the northern most serious wine region in the world, and it’s cold weather plays a role in Champagne’s fermenting process. “It was actually in England where wines from Champagne frequently had bubbles… they thought it was a flaw,” White said.

How can you make sure you get the most out of a restaurant or sommelier experience? “Tell them what you like and why, and don’t worry about how you sound,” White said.
