The NEW food-culture model by Refugees

‘The real taste of other cultures’

Refugees around the world now have a new medium to make the best of their cooking talents. The new model by takes food-culture potentials a step further towards building more cohesive communities around the world. Rather than just celebrating cultural diversity through the food dimension the platform shows the possible positive economic impact of this cultural dimension.

Refugees with cooking talents can sell -at affordable prices- meals to their neighbours in a matter of clicks.

Desirability comes first

Alice works at Place d’Italy in Paris. Her work starts at 9:00 and she normally finishes at18:00, from Monday to Friday. She lives in Bastille. Today is Monday, she is back home, and it is 20:00. She has already eaten. After putting the laundry in the washing machine, she lays on the couch, and starts a couple of chats with friends here and there. And she thinks ‘some Tinder won’t hurts too’. A couple of right swaps, some smile for a match, and then she starts to think about tomorrow: ‘What should I wear. What do I want to propose at the 11:00 meeting, and when will I drop my dancing shoe for some reparation on my way back home’. Then she starts to think about food. ‘What will I eat tomorrow evening?’ She asks herself. She logs into the ‘kitchen on the clouds’, chooses her meal for tomorrow evening from a variety of meals. Firstly, filtering by mood, then ingredients! ‘What an alternative approach to food rituals she tells herself. She has several options for dishes from different cultures. She places the order. She decides whether to pick it or to have it delivered to her either in Place d’Italy or Bastille on anywhere else! And voila! She is already craving tomorrow’s evening hot meal from Ethiopia along with that special desert from Damascus.

Feasibility & Performance

The kitchen’s system takes it from there. It makes all those mathematical backend calculations. At one hand it pushes the order into the queuing systems so that the cookers in the relevant neighbourhoods can propose there meals. On the other hand and at the back end of the system it breaks the meal down into ingredients and injects the information into the supply chain system. Where latter this week, farmers, butchers, cheese makers, bakers, and all sorts of food supply chain actors will receive the weekly report about market demands. Cookers also receive continuous updates from suppliers about supplies inventory, and prices. The system keeps developing. The more reliable and good information in, the more good outputs there are, and the more satisfied customers and win-win-win the situation is. Alice chooses the cooker she prefers and confirms the order. By 22:00 the kitchen stops receiving orders for the next day, allowing enough lead time for any slow or fast professional cooking to take place.

The environmental and social impact

With this ‘Just In Time’ approach Marzouk system ensures minimizing the waste of food and maximizing its freshness. This ensures pre-planning meals and accordingly proper outsourcing. This creates more viable and sustained food system on the longer run. This inventory accuracy works hand in hand with circular economy. They are complementary to each other.

With this system in place we ensure the cookers know what they have in stock, better optimize logistics, complete overview of the life-cycle of ingredients, eliminated expensive surprises which assures sound implementation and support for Green Supply Chain Management Practices (GSCM).

This model addresses environmental sustainability and reduces waste, carbon emissions, and energy use through the whole supply chain. Implementing GSCM improves both operational and environmental performance.

Also, with more frequent satisfied buyers, green packaging options and refills choices become more possible economizing options, reducing costs and prices.
