Garlic-Cilantro Crema: You Can Put This Sh!t on Anything!

This is my dirty little secret sauce that can be used to take your food to the next level. Great on any Mexican dish, sandwich, hell I would even put this in my cereal instead of milk if it weren’t for all the dirty looks I’d get.

Best of all it is SIMPLE

What you’ll need:

  • 1/2 cup cilantro (Stems too)
  • 1 large clove garlic
  • 1/4 cup half and half (you can use milk but do NOT use whipping cream)
  • Juice from 1 Lime (~2TBSP)
  • Zest from 1 lime (~2tsp)
  • 1/2 cup mayonnaise
  • 1 cup sour cream
  • salt and pepper
  • Blender or food processor

Place cilantro, lime juice, lime zest, garlic, and half and half in blender. Blend until smooth, the mixture should be a beautiful neon green. If it is too light, or if you just really like cilantro add more and blend.

Transfer liquid to medium mixing bowl. Add Mayo and Sour Cream and whisk until smooth. Salt and pepper to taste. Stores well for up to 1 week.

The best thing about this recipe is that it is easily customized for different dishes. Here are a few of my favorites so far:

Street Corn: Simply add a little bit more mayo and some smoked paprika, goes great with roasted or grilled corn

Borratcha (drunken sauce): Add 2 TBSP of your favorite tequila into the blender then make as normal.

Spicy: Add 2 seeded roasted jalapenos (raw is fine too) to the blender and make as normal.

I bet you’ll have as much fun coming up with your own variations as you will eating them.
