Game changer gluten free rolled oats quesadillas

Last week when I was in Majorca I had the most delicious gluten free rolled oats quesadilla in a little café on a dirt road on the way back from the rocky beach.

It was so delicious that I didn’t even realize it was gluten free until I spoke to the chef at S’Hortet who told me he whizzed up rolled oats in a food processor until they resembled flour and added water until it formed a firm ball. I was absolutely gob smacked to say the least, not only did the rolled oat tortilla still have a good amount of chew and bite, it didn’t have the awful aftertaste that gluten free food seems to have.

The quesadilla was served with fresh basil pesto served from their herb garden, and thinly sliced zucchini and rocket from their vegetable garden. We sat amongst their lemon and lime orchard sipping cold glasses of white wine relaxing from the 30-minute trek uphill from the beach.

Majorca even though a huge tourist destination with nightclubs and bars, still has enough rustic charm once you leave its capital city Palma, that the days just melt away. Our favorite village to visit is Deia in the Serra de Tramuntana mountains with its terracotta color building…
