My first recipe from China was a joy to receive, especially because I eat more fish than meat and was intrigued by using sliced tomatoes on top of the fish instead of slices of lemon that I would normally use.

Steamed fish with tomatoes and ginger comes from Luna in Huzhou, China. Huzhou sits to the west of Shanghai on China’s third largest freshwater lake, Lake Taih. It has a huge fishing industry with many locals enjoying fresh water fish and crabs drawn from the lake.

When I read Luna’s recipe I assumed that she would have used a white fresh water fish, but because I had a side of salmon already in my refrigerator, I decided to use it instead. Having tasted how delicious this recipe is, I would imagine any oily fish can be used like trout, cod, haddock or tilapia.

The tomatoes in this recipe keep the fish moist and serve the same function as the lemons would do. The addition of ginger makes it taste more authentically Chinese, although Luna says this isn’t a traditional Chinese recipe at all. But having done a little internet research, I found that the Chinese do enjoy tomatoes and fish together. There are several delicious looking recipes for fish and tomato soup only a couple of clicks away.
