London-based food tech startup, WNWN Food Labs, is releasing the first cacao-free chocolate for sale

What if you could grow and create a ‘chocolate’ bar in your own backyard? One that tastes just like a Hershey bar, but doesn’t contain any chocolate or has the air miles that goes along with making such indulgent treat?

That’s exactly what WNWN Food Labs have set out to do with the launch for their cacao-free ‘chocolate’ bar made from combining sustainably-grown British barley and organic Italian carob. Founded by Ahrum Pak and Dr Johnny Drain, the two have created an alternative chocolate that tastes so similar to chocolate, that you might not even realize you’re not eating the real thing.

When I was a child I was slightly allergic to chocolate and my grandmother would make me carob candy, but it never really tasted like chocolate, so I’m curious about how you’re making your carob taste more chocolatey?

Ahrum: When people think about carob, they think about the good ol’ hippy dippy stuff that was widely maligned with articles about ‘Scarred by carob’, which is a bit unfair because it actually has amazing antioxidant properties that has chocolatey notes. Along with our other hero ingredient, barley, when we ferment, roast and process the two, we get complex chocolatey flavors.
