My Blood Sugar Levels Showed Me Good From Bad Sourdough Bread
And how to tell if your sourdough bread is good (pics to help!)
I have gestational diabetes (GD).
This means I have to prick my finger four times every day to measure my blood sugar level: as soon as I wake up and an hour after every meal (I know, I know, it's not fun, but I will do whatever I have to to have a healthy baby).
To avoid having to prick my finger in the morning, I started eating the same breakfast. It consists of eggs with sourdough toast and leftover fruit scraps from my daughter’s lunchbox.
I’m in my 24th week of pregnancy (there are generally 40) and started to test 15 weeks ago (this is considered way early, but I did it because I also had gestational diabetes with my first child). This means I now know my eggs and my sourdough too well. While I can also write an entire article on eggs, this is about sourdough bread.
