After last weeks heat wave I think it’s safe to say that summer is here to stay for awhile. And these 5 Ingredient Gluten and Dairy-Free Mint Chocolate Popsicle are the perfect way to beat this heat!
It’s the battle of the seasons in New York City; it’s the city that never sleeps, but it’s also the city that can’t make up it’s mind if it’s Winter, Spring, Summer or Fall. And I’m looking for all the delicious ways to stay cool as the temperatures rise. This summer I plan to eat at least one of these mint chocolate ice pops every day!
You already know I have a love for chocolate, and in the summer I love pairing chocolate with mint for the fresh and cool flavor. Mint is an amazing summer herb with incredible health benefits.

These 5 Ingredient Mint Chocolate Popsicles are made with coconut milk so they’re dairy-free. They’re refined sugar free, sweetened only with medjool dates. This makes them the perfect way to satisfy your sweet tooth. They’re also made with cacao powder, mint and cacao nibs. You’ll be cooling off before you know it with these indulgent treats!
You can add as much or as little mint as you like depending on your minty preference! I love the mint flavor and kept adding more for that fresh taste! The cacao nibs are completely optional; you can also use dairy-free chocolate chips in the recipe. I just love the idea of a recipe makeover for the traditional mint chocolate chip ice cream I ate every summer as a kid. I hope you enjoy these creamy chocolate popsicles as much as I did!
5 Ingredient Gluten and Dairy-Free Mint Chocolate Popsicles
Yields 10 popsicles
- 10 mint leaves
- 6 Natural Delight Medjool Dates
- 2 cans full fat coconut milk
- 1 cup cacao powder
- cacao nibs, optional
- Combine all ingredients in a blender for 30 seconds until smooth.
- Optional to add cacao nibs after blending (mix with a wooden spoon to combine).
- Pour into popsicle molds and let freeze for at least 4 hours.
