Peanut Butter Cheesecake with Chocolate Crackle
This will make you an irresistible minx on date night. You’re welcome.
For the crust:
1/2 cup almonds 1/ cup walnuts 1/2 cup pecans 1/2 cup pitted dates
1/4 cacao powder
Place all crust ingredients into food processor and process approx. 3 minutes or until sticky and place in fridge to set.
For the filling:
2 cups cashews (soaked for several hours is a must or it won’t blend smoothly) 3/4 cup creamy peanut butter 1/2 cup maple syrup ½ cup coconut oil (measured, then melted)
1 tp sea salt
Place all cheesecake ingredients into food processor and process until smooth and creamy, add overtop of crust layer and refrigerate overnight.
For the crackle:
4 tbsp coconut oil 4 tbsp cacao powder
3 tbsp maple syrup
Melt coconut oil, then whisk in maple syrup and cacao powder. I poured into a ziplock bag, snipped the tip and added it in stripes to the top. It’s quite liquid so if you like, you can just make a solid chocolate top.
Everyday can be a positive, loving, eat cheesecake kind of day. It’s all about perception and focus. For me it has always been about “getting my food right and my head right.” What that means is I always have a positive conversation with my food and get very excited about feeding my body all it wants and needs for optimum wellness and I observe my thoughts daily and position myself for success in life.
