Peruvian Beef Roast (Asado a la Olla de la Abuela)

This is a meal every family in Peru has learned to perfect.

It combines simple ingredients with the patience needed to wait for the need to cook to perfection. This creates the ideal environment for couples, or families, to connect with each other.

Preparing, making, and eating this flavourful dish is like food therapy for any relationship!

You’ll enjoy this recipe which was one of Hazel’s grandmother's favorite who recently passed leaving her recipes as her legacy. Beware the sauce can become addictive!

🍅 🥩 INGREDIENTS 🥩 🥕 (serves 10)

Eye of round beef “Pejerrey beef” (4.5 lbs — 2 Kg)
1 medium onion
2 carrots (peeled)
2 tomatoes
5 cloves of garlic
5 bay leafs
½ cup of Ají Panca <Get it on Amazon>
2 cups of red wine
1 cup of beef broth (or any broth)
Salt, pepper, and cumin to taste

🥘 COOKING INSTRUCTIONS 👩‍🍳 👨‍🍳

Using a slow cooker. For a regular cooking pot, reduce to 3 hours. Make sure to use a pot that has a thick base.

Step 1.
Make an incision in the middle of the meat.

Step 2.
Insert one peeled carrot into the hole.

Step 3.
Chop into cubes the onion, the carrot (peeled), tomatoes, and garlic.

Step 4.
Sear each side of the meat and remove it from the fire.

Step 5.
In the same oil fry onions, garlic, and tomatoes.

Step 6.
Season with salt, pepper, and cumin.

Step 7.
Add Ají Panca paste and cook all together for about 5 minutes to create a base for the meat. Or until it smells so good you want to eat the meat raw. 😉

Step 8.
Bring together the base, beef, chopped carrot, wine, and broth into the pot.

Step 9.
Cover and cook for 6 hours on low heat.

Step 10.
Dance… and make your favorite mashed potatoes and rice.

Step 11.
Remove meat from the pot and let it sit for 10 minutes.

Step 12.
Remove the juices and veggies from the pot and blend together to create a sauce.

Step 13.
Cut meat into ½ inch slices

Step 14.
Put the sauce back into the pot as well as the slices of beef. Let it warm together until ready to serve.

Serve over mashed potatoes and rice.
