So good, so smokin’ good.

We finally get our parents.

One day you’ll understand” they use to tell us. “When you have kids you’ll see”, they reminded us.

And we grew, and had kids, and saw, and understood.

Being a parent is at times exciting and challenging, many times gratifying, often hard, and exhausting, but always demanding.

Parents are always wondering, always adjusting, and always learning.

The comfort zone is a moving target. And a zone we have learned to appreciate for those precious seconds we get to enjoy it.

The best-kept secret in parenthood is how safe we actually feel challenging ourselves to step out of the comfort zone.

That’s the growth zone, and as our parents used to tell us, the best way to grow strong is by eating well.

🍗 🌶 INGREDIENTS 🍗 🌶 (serves 4)

5 pieces of chicken splits (with skin)

For the first marinade
2 tsp ginger-garlic paste (you can make it or buy it)
4–6 tsp Kashmiri chili powder (( I have added 1 tablespoon))
2 tbs lime juice
Salt To Taste

For the second marinade
600 grams dairy-free yogurt (you can use greek yogurt)
2 tbsp Ginger Garlic Paste
4–6 tsp Kashmiri red chili powder (link to AMAZON)
2 tsp Coriander Powder
2 tsp Garam Masala Powder
2 teaspoon cumin
1 cup Mustard Oil

🥘 COOKING INSTRUCTIONS 👩‍🍳 👨‍🍳

Step 1.
In a large bowl make the first marinade and bring together the chicken splits. Cover the bowl and chill for at least 1 hour.

Step 2.
In a different bowl make the second marinade bringing all the ingredients together. Remove the chicken from the other marinade and make incisions throughout. This will help the flavors of the marinade penetrate the core of the chicken. COver the bowl and chill for 8 to 24 hours. The longer it marinates the better it will taste.

Step 3.
Take the chicken out of the fridge 45 minutes before cooking. Add more salt and pepper to taste.

Step 4.
Based on your preferred cooking method, stove, oven, or grill; get your heat ready. The recipe we have made is done on the grill with charcoal and smoky wood. See below for oven instructions.

Step 5.
Place chicken on the grill and let it cook for 25 minutes on one side and then flip over to cook for an additional 15 minutes. The time will vary based on the heat levels, and the type of chicken you choose to use. We recommend using a meat thermometer and make sure the internal temperature of the thickest part of the chicken is 165ºF/79ºC.

Serve with lentils, yogurt, chutney, salad, or your choice of side dish.
