Jaggery Pancake and Baby Corn Stir Fry for Veganuary 2023

Welcome to Veganuary 2023! Every new year, lots of people consider going vegan and try practicing a vegan lifestyle for one month, and that’s why the name “Veganuary”. Vegans celebrate not just a new year but welcome those who try veganism for the first time in January each year. Today, I’d like to share a couple of recipes. Please feel free to share your ideas and recipes, too. Also, believe me, these days, there are vegan versions of everything non-vegan you can imagine, like faux leather, faux fur, vegan chicken, vegan ham, vegan honey, and even vegan eggs!

Baby Corn Stir Fry:

This makes for a nice, spicy evening snack. I had half a pack of baby corn left and didn’t know what to do, so I decided to make this snack. It is quite simple, and even those who don’t cook much or often can easily make this. I use this one as a snack, but you can have this with rice or rotis, too.

Ingredients required: (serves one)

Baby corn — 1/2 a dozen kernels (or more if you want)

Onions — 1.5 medium-sized

Cooking Oil — 1.5 tablespoons

Salt — half a teaspoon

Chilli powder — 1.5 teaspoons

Coriander leaves — 1.5 tablespoons, chopped

Optional:

Sesame seeds — 1/2 a tablespoon

Steps to Cook:

Step 1: Chop the onions and the baby corn kernels. These might look like they are hard, but they really are not.

Step 2: Add the cooking oil on the pan and stir fry the onions until they are deeply fried. Or let it cook for about 5–7 minutes on low fire.

Step 3: Add the chopped baby corn kernels to the pan. Add salt and chilli powder and mix well so that all the baby corn kernels are coated with salt and chilli powder.

Step 4: Let them cook for another 5–7 minutes on medium fire.

Step 5: (This step is optional.) Add the sesame seeds as you wait for the vegetables to get cooked.

Step 6: Once cooked, switch off the stove, transfer the contents to a bowl or plate, and add the coriander leaves.

If you’d like, you can add a few other spices as well. Serve while it’s hot. This one came out to be much tastier than I expected it to be.

See, like I said, it’s super easy to make this one; you don’t need much cooking experience to give your family and friends this nice little surprise in a bowl on a weekend evening.

Jaggery Pancake:

This is a really yummy dessert item. Kids and adults will love this one. You can have this one along with wine or following a meal. I chose to make this for dessert on a Sunday evening. This one is easy to make, too. But unlike the earlier recipe, this requires a little more ingredients. I hope you have made pancakes before, and this is not the first time you are making. Plus, this also requires more oil than the stir fry.

Ingredients required: (serves two)

Wheat flour — half a cup

Refined wheat flour — 1 cup

Baking powder — 1 tablespoon

Cooking Oil — 4–5 tablespoons

Raisins — 1/4 th of a cup

Jaggery powder — 3–4 tablespoons

Water — 1/2 a cup

Optional:

Dark chocolate syrup (or maple syrup) — 4 tablespoons

Ripe bananas — 1 or 2 small ones

Steps to Cook:

Step 1: Mix the wheat flour, refined wheat flour, and baking powder in a bowl.

Step 2: Add the jaggery powder and mix well.

Step 3: Add the raisins, 1.5 tablespoons of oil, and water. Mix well. Remember, the mix should not be too solid or too watery either. The mix should be thick.

Step 4: Heat the pan, add 1.5 tablespoons of oil, and add the batter and flatten it. We want it to be more or less even while we spread the batter on the pan.

Step 5: Let this cook on low fire for about 4–5 minutes.

Step 6: Carefully, turn over the pancake. Add another half a tablespoon of oil, and let it cook on medium fire now for 4 minutes.

Step 6: Take this one off the pan, and make a few more if you have any batter left.

Step 7: Before serving, pour a few tablespoons of maple syrup or dark chocolate syrup on top of the pancakes. Serve hot.

The typical Indian dessert or Indian sweet would include ghee and milk or butter and milk. This dessert item being vegan, includes no milk, not even vegan milk. Since it has raisins, jaggery, and chocolate syrup or maple syrup, I can guarantee that this will be one of the sweetest desserts you’ve had in some time.

Like I’d mentioned earlier, there are vegan equivalents and vegan versions of every dish you can imagine. We really don’t need either meat or dairy products or even eggs.

You just have to use your creativity in the kitchen, or follow vegan bloggers for vegan recipes. Top food brands like Nestle, McDonald’s, Burger King, Baskin Robbins, etc. are all coming up with vegan products becaus ethe future is vegan.

Yes, veganism also helps reduce the carbon footprint, thereby making vegan diet a choice for environmentalists as well, which is why climate activists including Greta Thunberg and many youngsters these days are going vegan.
