Stuffed Bell Peppers with Indian Style Vegetable Fry

This is mouth-wateringly delicious, so cook twice the amount you usually would! If you have a small quantity of vegetable fry left over from lunch or if you have small quantities of a mix of vegetables and a few bell peppers, too, this dish should be your go-to. You will love it!

If you already have vegetable fry left over, then you can skip the part where you make the vegetable fry. If not, you can make this from scratch, including the stuffing (which is where we would use the vegetable fry). You can use your favourite veggies. I will share below the vegetables I have used to make stuffed bell peppers with Indian style vegetable fry.

Ingredients required: (serves 2)

Bell peppers — 2–3 numbers

Carrots — 1–2 small ones

Baby corn — 2–3 small kernels

Onion — 1, medium-sized

Tomato — 2, medium-sized

Garlic — 2 cloves

Vegan cheese — 1 tablespoon (optional)

Cooking oil — 3–4 tablespoons

Salt — 1 teaspoon

Spices:

Mustard seeds — 1 teaspoon

Coriander seeds — 1/2 a teaspoon

Turmeric powder — 1/2 a teaspoon

Sambar powder — 1/2 a teaspoon

Herbs/greens:

Coriander — 1/4 of a cup

Curry leaves — small quantity

Recipe for Homemade Vegan cheese:

If you would like, you can make your own vegan cheese using the recipe given here. That’s the recipe I have used in the evgan cheese I have added in this recipe as well.

Method to Make Indian-Style Mixed Vegetable Fry:

Step 1: Chop the onions, tomatoes, and other vegetables.

Step 2: Add 1.5 tablespoons of oil to the pan, keep the pan on low fire, and add mustard seeds. Within a short time, you will see and hear the mustard seeds cracking.

Step 3: That’s exactly when you should add the curry leaves, onions, coriander seeds, and garlic cloves. Fry them for a couple of minutes.

Step 4: Next, add the tomatoes, the salt, sambar powder, and turmeric powder, and mix well. Let this mix cook for a couple of minutes on medium flame.

Step 5: Now, add the chopped carrots, 1/4 cup of water, mix well, and let this cook for 8–10 minutes on medium flame.

Step 6: By this time, the tomatoes would have become mushy. Add the baby corn pieces and vegan cheese, mix well, and let it cook for a few minutes. We don’t want the baby corn to get well-cooked, which is why we add these in the end.

Step 7: Add the coriander leaves, mix well, and switch off the stove.

Indian Style Mixed Vegetable Fry

Method to Make Stuffed Bell Peppers:

Step 1: Wash the bell peppers and cut the stem portion off.

Step 2: Cut open the top of the bell peppers and gently de-seed them (remove the seeds). We will be using these as edible containers for our stuffing.

Roasting the Bell Peppers

Step 3: Add 1.5 tablespoons of oil on the pan, and roast your bell peppers. This could take some time. Be patient.

You can decide for how long you’d like to roast them. I don’t want them completely roasted, so I keep my pan on low fire for a shorter period of time, say for about 6-8 minutes.

Step 4: Using a spoon, add the stuffing, the Indian style vegetable fry we just made into the bell peppers. (Or if you’d be using your left-over fried vegetable that you already have, them warm it up and add the mix to the bell peppers.)

Step 5: Serve hot. This would make a truly delicious appetizer.

This appetizer consists of a lot of oil; if you would like, you can reduce the oil content.

Bell Peppers aka capsicum, belonging to the chili family, are another source of several vitamins and minerals. Try using these more frequently in your diet if you take them only rarely.
