My Tips for Making Creamy and Tasty Oat Milk
I am vegan. I have been on a dairy-free diet for almost five years. It’s helped me maintain a healthy lifestyle, which has spilled over and improved other parts of my life. However, there can be a downside. Being vegan can make a huge dent in your pocket if you rely solely on store bought products.
I used to spend £1 for 2.272 litres of dairy milk, but when I switched to dairy-free alternatives my expenditure tripled. I was now spending £1.50 for just one litre of dairy-free milk.
Fortunately I learnt that it was possible to make vegan alternatives, including dairy-free milk, at home for a fraction of the cost. Dairy-free milk is easy to make and tastes just as good — if not better — than the store bought versions.
My favourite dairy-free milk is made from oats. I tried loads of different recipes over the years, before finally coming up with my own fool-proof version.
During my research I noticed that each recipe had its own secret ingredient which made it creamier, or tastier, or less slimy, or stopped it from separating. I took the best aspects from all of them and created my own perfect recipe.
You don’t need fancy equipment to make oat milk but a good blender is definitely worth investing in. It’ll pay for itself in no time. You can use it to make other things such as smoothies and flour too. I will share those recipes another time.
Equipment You Will Need
- Measuring cup
- Measuring spoons
- Mesh cloth
- Two containers for straining the milk into
- Airtight container to store the milk
Total preparation time: 15 minutes
Servings: Makes one litre of milk
2 x 250ml cups oats
6 x 250ml cups refrigerated water. (Add ice cubes if the water isn’t cold enough. Cold water prevents the milk from going slimy.)
1 teaspoon vanilla essence
1/8 teaspoon Xantham gum. (This prevents the milk from separating when stored in the fridge.)
1/8 teaspoon fine salt
1 Tablespoon sugar. (You can also use dates to sweeten if you don’t like using sugar.)
- Mix oats, salt, Xantham gum and sugar then add to blender
- Mix vanilla essence and water then add to the dry ingredients in the blender.
- Add dates if this is what you are using to sweeten the milk.
- Blend for 60 seconds.
- Strain the mixture twice using a sieve. You can keep the pulp and use it in baking or throw it away.
- Pour the mixture into a cheesecloth or other suitable fine strainer.
- Squeeze contents or leave to strain.
- Pour strained mixture into an airtight container.
- To Prevent Milk from Going Slimy
The blending process generates heat which makes the milk slimy. Using refrigerated water prevents this making the milk smooth and creamy rather than slimy.
2. To Prevent Milk from Separating
If you plan on storing your milk in the fridge for a few days, you don’t want it to separate. Adding Xantham gum prevents the milk from separating. It makes it look good too, especially when stored in a glass bottle.
If you don’t mix the Xantham gum to the other dry ingredients before blending, it will not blend well. I made this mistake when I added it straight to the cold water and it just went gummy.
3. To Successfully Cream Hot Drinks
Add milk to your cup first, following by hot water. Fill up halfway then add your coffee, hot chocolate or tea bag then top up with the remaining hot water.
