Why aren’t you eating your vegetables?

It’s quite likely that you’re familiar with the benefits of eating vegetables. Studies show that people who eat sufficient amounts live longer; have improved energy; have better bone and skin health; and even have less stress.

Fitting more vegetables into your meals is fairly easy - Just try these simple steps.

Eat them at breakfast. Breakfast is a great start to build a habit of incorporating vegetables into your meal plans. Vegetables go along nicely with scrambled eggs or an omelet, with your sandwiches or with your boiled pulses.

Blend them. Try blending them up in a smoothie or a soup. Choose your favorite “base,” such as milk or stock. Add coconut or dairy cream for taste if needed. Then, throw in some vegetables (any kind will do)! Blend away. Cook later or serve cold and enjoy.

Get them from a great chef. Sometimes it’s easier to eat vegetables when someone else has prepared them. Take advantage of that when you’re eating out: choose a salad and a cooked vegetable.

Cut those carbs. Why not slash some carbs and eat more vegetables at the same time? Substitute cooked cauliflower or beans for rice. Try blended pumpkin soup instead of porridge. Picking a carb and swapping in a vegetable instead is easy and you’ll love the way you will feel afterward.

Finally, use your creativity. Challenge yourself to find better ways to incorporate more vegetables into your diet. You won’t look back.
