豆類是素食者蛋白質非常重要的來源,像是鷹嘴豆、黑豆與紅腰豆等皆含有高蛋白質、纖維與礦物質,是素食料理很重要的食材外,想要來點健康的地中海料理者也很適合嘗試。

Beans are a very important source of proteins to vegetarians/vegans. For example, chickpeas, black beans, kidney beans contain a lot of protein, fibers, and minerals, they’re not only the essence in vegetarian/vegan dishes but also a great choice for those who want to try a healthy Mediterranean diet.

我非常非常喜歡喝豆子湯,很喜歡它綿密的口感。特別是這一鍋充滿蔬菜與豆類營養精髓的湯再加入喜歡的義大利麵,就變成一份超暖心美味又有飽足感的晚餐啦~

I love, love beans soup, I love how creamy the beans taste. With plenty of fresh vegetables and beans, simply add some pasta of your choice then it turns to a hearty, yummy, and filling dinner.

不過他並不完全是地中海料理,是台灣版的嘻嘻。如果是傳統的地中海豆子湯,其主要底料為:洋蔥、大蒜、彩椒、番茄與紅蘿蔔。但我沒有彩椒,所以加了彩椒粉。你可以自己調配喜歡的香料,我覺得很好玩!之前嘗試加過孜然粉與小茴香粉,也非常好喝!不過就比較偏向印度口味了。其他蔬菜隨你喜歡,我冰箱裡剛好有蘑菇與羽衣甘藍,所以我就加這些啦~而且地中海料理一般只用橄欖油,但我這次有加一些奶油增加濃郁感。

But it’s not a typical Mediterranean dish, it’s a Taiwanese version hehe. Typical Mediterranean bean soup is cooked with onions, garlic, peppers, tomatoes, carrots, but I do not have peppers so I added paprika instead. You can add any spices you like, it’s fun to play with spices! I once made one with cumin and coriander, it was so yummy as well but then it’s more like Indian…
