A vendor serving up a bowl of mì Quảng, a noodle dish originated in Quảng Nam Province, central Vietnam. Unlike most noodle soups where the broth usually fills up the bowl, mi Quang’s both is only poured over flat rice noodle in a small quantity for the broth is used to simmer the meat for hours to produce a saturated and full-bodied flavor. It is usually topped with pork, prawns, hard-boiled eggs, peanuts, vegetables and sesame rice crackers. Like the warm and rustic yellow walls ubiquitous in Hoi An, this dish is also yellowish in appearance.
