A Mashed Up Recipe Featuring Greg’s Cajun Tofu Steak

In an attempt to get rid of some of these roots before they wither up and turn to mush, I scratched out a simple mashed potato and turnip recipe. It’s slightly inspired by a mashed potato and parsnip recipe Jacob made me for my birthday last September. Using a combo of flavors I try to always have on hand in my kitchen, it’s a very flavorful variation of not-your-usual-mashed-potatoes.

If you live in Lebron James’ hometown and found a package on your doorstep wrapped in Cleveland ‘Scene’ newspaper, with this recipe attached:

you are the lucky owner of a Locavore Exchange turnip or two. Wash them. When the dirt won’t wash off anymore, feel free to cut the rest of the dirt and whatever else doesn’t fit your turnip taste. As for me, I left the dirt and worms in the turnip, cooking them along with the onion and potatoes for some extra texture and flavor.

Greg and Madeleine, a couple neato friends, tried the recipe out and paired the hed turnips nd taters with Greg’s Cajun Style Tofu (pictured above).
