The strawberry bed is growing like crazy! The kids and us pick at least 10 strawberries every day! We are quite thankful for our little strawberry bed! They are my kids’ favorite fruit! And that I am very grateful for since I know all the benefits they carry in every bite! Let me show you!

Classic Strawberry Shortcake

Ingredients:
- 1 quart fresh strawberries, hulled and sliced
- 1/4 cup sugar
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar

Instructions:
1. Preheat your oven to 425°F (220°C). In a bowl, combine the sliced strawberries and 1/4 cup of sugar. Set aside.
2. In a large bowl, mix the flour, 1/4 cup of sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
3. Add the milk and vanilla extract to the flour mixture and stir until just combined.
4. Drop spoonfuls of dough onto a baking sheet to form shortcakes. Bake for 12–15 minutes or until golden brown. Let cool on a wire rack.
5. In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form.
6. To serve, split the shortcakes in half, spoon the strawberries over the bottom halves, top with whipped cream, and cover with the top halves of the shortcakes.

No-Bake Strawberry Cheesecake

Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 pound fresh strawberries, hulled and sliced

Instructions:
1. In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
2. In a large bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract and mix until well combined.
3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
4. Spread the cream cheese filling over the crust in the springform pan. Refrigerate for at least 4 hours or until set.
5. Arrange the sliced strawberries on top of the cheesecake before serving.
