
Years ago I stumbled across a recipe that paired some refried beans over rice with a homemade Granny Smith Apple salsa. And just like that — I fell in love with beans with my rice.
For all of My Life — I have loved rice. Any rice, anyway, anyhow one makes it. I have never met a rice I didn’t love. My mother never made rice — I started making it as a married Human and if I say so myself — I make damn good rice.
But that recipe — with the beans and apple salsa completely blew me away. The original recipe calls for shredded chicken to go on top and that was pretty good. However, since I became a vegetarian — I’ve made it without the chicken and it is even better on its own.
I am happy to report my middle granddaughter shares my love for rice. All three of The Magical Creatures love beans. In fact, my daughter serves beans just about every night for dinner.
