Moringa Lentil soup
Simple and healthy recipe
Lentils are an amazing source of plant-based protein. Add a handful of moringa to it, and you will get a high protein-powered healthy soup. Moringa leaves are the powerhouse of nutrition. There are many ways to add this nutrient-rich fresh leaves or powder to the diet. Power up your immune system now and then by making this healthy soup
Ingredients
Coriander leaves
Lentils 1 cup. Cook separately and keep aside(optional)
Salt and pepper as required
Moringa leaves a handful. If it is powder 1 tablespoon
Lemon half slice
Cumin seeds 1/2 tsp
Garlic 5 cloves
Ginger 1 tbsp
Water 4cups
Oil 1 tsp
Shallots 3 or onion 1
Tomatoes 1
Method
Heat oil in a saucepan. Add cumin. Add onion and garlic and saute for 2 minutes. Add tomatoes and cook until mushy. Add cooked lentils. Add mornga leaves and saute for 3 minutes. Add water and cook for 5 minutes. Season with salt, pepper, and butter. Butter is optional. Serve hot with lemon juice. You can add vegetables of your choice as well. You can also make this soup without adding lentils.
