Summer — A Time for Tomatoes (and Basil)

They laugh at the soaring temperatures!

I love summer! I love it even though we’re deep into 100+ degree days in Texas. Daily “feels like” temps have been 105 to 116 F for a week due to high humidity combined with high temperatures. The days will be even hotter this week. But somehow, the garden still looks great! The tomatoes just won’t quit, and I have a basil plant that looks like a shrub because it’s so big.

The egg cartons in the photo are filled with eggs from my backyard flock. Usually, the hens stop laying when it gets this hot, but this year I’m still getting four to eight eggs every day. In the spring, I was getting 10 eggs a day out of 12 hens (2 are older gals).

Earlier in the summer, I harvested a bumper crop of potatoes that we’ll be eating all summer. This basket is just a portion of this year’s bounty.

I’ve been coming up with ways to use basil, tomatoes, eggs, and potatoes in as many meals as possible.

Frittata

Egg Salad

Potato Salad

Pesto

Shakshuka

Any other ideas?
