Not sure if there anyone in the world, who doesn’t like a good cheesecake. But I’m pretty sure that many people who adore cheesecakes don’t want to bother themselves by cooking them at home. Because it simply won’t be like the one served at your favorite coffeshop. It cannot be. For various reasons. But a homemade cheesecake is also good. Especially, if it’s a ricotta-based Portuguese cheesecake.

UPD: now I can also recommend a lavender cheesecake (follow this recipe!)

It’s simple to cook and you can serve it with fruits and berries to your taste. The first time I had a bunch of strawberries cooked with a pinch of sugar & cinnamon, the second, some fresh figs. Both turned out to be great!

Portuguese people cook cheesecakes without pastry, that makes this cake even healthier, lighter, softer, and yummier of course.

It’s finally warm enough for brunches outside! Yay!

Here’s what you need:

  • 500 g (1 lbs) of ricotta
  • 300 g (0.66 lbs) of sugar
  • 3 eggs
  • 2 egg yolks
  • 2 tbsp of flour
  • 1 tbsp of cinnamon

It’s easy as hell:

  1. Thoroughly beat all the ingredients together. Pour into a cake tin, buttered and lined with baking paper.
  2. Bake in the oven, pre-heated to 180°C (350°F) for about 30–60 minutes, until the cake is golden on top.
