Berry Watermelon Mint Smoothie Recipe

We bought a nice big watermelon so we’d have plenty to share with friends, but when the friends had to cancel, I was left with a giant watermelon that needed eating (sniff, here’s where I try to look sad).

What to do with a really ripe watermelon and a garden filled with fresh mint? Well, we did make a nice round of watermelon mojitos. But in the spirit of not putting booze in EVERY beverage, I also used some of it in my morning smoothies.

I found the easiest way to do this was to scoop all the flesh out of the watermelon and put it in the vitamix. Then put the slushy juice into a large mason jar in the fridge so it was easier to store and easier to use in smaller quantities whenever I wanted a smoothie.

Ingredients

  • 1/2 cup watermelon puree or 1 cup watermelon chunks
  • 1/4 cup greek yogurt, or coconut yogurt or your favourite yogurt alternative
  • 1/2 cup frozen mixed berries (I used strawberries, blackberries and raspberries)
  • 6 mint leaves
  • optional — if your berries aren’t frozen you might want to throw in a few ice cubes to get that super chilly, slushy effect
  • optional — if you don’t have enough liquid, chilled herbal tea is a great way to add liquid without diluting the flavour. My go-to flavours for this blend are either peppermint tea or lemon.

Equipment

  • vitamix or other food processor

The Process

STEP 1: Well, there’s really only one actual step to this. Throw everything in the blender and blend it all up until it’s smooth and creamy.

STEP 2: Fairly self evident, but this is where you enjoy the heck out of your beverage!
