Chocolate and Raspberry Layered Avocado Mousse

I made this for dessert on thanksgiving for those in my family who have any number of allergies. Turns out, lots of the others were sending covetous glances in the direction of our desserts.

I found the tartness of the raspberries to be a perfect offset for the rich chocolate of the mousse.

For another fun variation, add in a layer or two of plain greek yogurt so you have 3 different colours, flavours and textures that will complement each other perfectly. This is also a great way to “stretch” your ingredients if you get a last minute addition to your dinner party!

Ingredients (per serving — just multiply by number of servings you want to make)

  • Ripe avocado (1 small one, or half a large one)
  • 1 Tbsp cacao powder
  • 1 Tbsp honey (or maple syrup if you’re vegan) — adjust to taste
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/4 cup raspberries (fresh or frozen)
  • 1–2 tsp chia seeds (more if your frozen berries are watery as they thaw, less — or none — for the fresh berries)
  • sliced almonds (optional — these are fun for a bit of contrast in colour and texture, but leave off if anyone has nut allergies!)

Equipment

  • blender or food processor

The Process

STEP 1: Mash or blend thawed frozen raspberries with the chia seeds. Leave it to set for at least half an hour. OR — if you’re lucky enough to have fresh raspberries on hand, just leave them as they are!

STEP 2: Blend avocado, honey/maple syrup, vanilla, cinnamon and cacao powder in blender or food processor until smooth.

STEP 3: Alternate layers of the chocolate mixture and the raspberry mixture into a glass or pretty dish. Or just put a nice dollop of raspberries (or raspberry sauce) on top.

STEP 4: Put the finished dessert into the fridge until it’s time to enjoy.

STEP 5: Bliss out while your tastebuds explode in fireworks of chocolately, raspberry goodness!

Note: while best consumed with a spoon, you may want to have a fork on hand to help defend your dessert from greedy, grabby neighbours who have gulped all theirs down and want more…
