Kiwi Mango Peppermint Smoothie

Keeping a good supply of frozen organic fruit in the freezer is one of my favourite ways of staying on top of eating a healthy breakfast, and also provides a nice alternative to an ice cream craving.

Last time I was in Costco they had large clamshells of organic kiwis on sale, and I couldn’t resist. However, getting through them all before they went from perfectly ripe to mush was not going to happen. So I peeled a bunch, cut them up and froze them in chunks.

This morning when I wanted something to pep me up a bit before I headed out for an early yoga class, I opted for a lighter smoothie recipe. I knew I was going to have breakfast with my husband when I returned home, but didn’t want to face a two hour yoga class on a completely empty stomach either.

I figured mango and kiwi would be tasty together, but the only kind of herbal tea I had pre-brewed and chilled in the fridge was peppermint. And guess what? Despite my skepticism, it tasted fantastic.

So here’s the recipe if you want to try it for yourself. I went with frozen fruit across the board so it was super thick and slushy, but it would be nice with fresh fruit too.

Ingredients

  • 1 large, fresh, ripe kiwi or 1/2 cup frozen kiwi chunks
  • 1/2 cup frozen mangos
  • 1 cup chilled peppermint herbal tea (or more as needed — the more frozen fruit, the more liquid required so you don’t blow up your blender!)
  • optional — if your mangos or kiwis aren’t frozen you might want to throw in a few ice cubes to get that super chilly, slushy effect

Equipment

  • vitamix or other food processor

The Process

STEP 1: Well, there’s really only one actual step to this. Throw everything in the blender and blend it all up until it’s smooth and creamy.

STEP 2: Put it into your stomach, via a glass or your favourite drinking jar!
