Kakuni Aka Ramen (一本焼豚ら麺)

Let’s talk about ramen.

I love ramen, especially fond of Tsukemen(dip noodles). My love of ramen have bring me and 2 other crazy friend to a 3-day tokyo ramen pilgrimage trip and kinda screw up our taste bud(which I would write about soon, stay tuned!)

People always ask me which ramen place I would recommend in Malaysia and I notice there are very little in depth review from the ramenhead standpoint. Thus, I’ve decided to share my little ramen adventures and the mesmerising experience brought by each bowl of umami.

Ramen is a affordable dish which usually costs around 800–1000 JPY (20–40 MYR). There is no a single way to make a good ramen but it was up to the chef ingenuity to create the ultimate ramen that carry their own signature taste.

Menya Shishido mainly serves Tonkotsu ramen (豚骨ラーメン) which is pork bone soup based ramen. Usually a good tonkotsu broth requires cooking the pork bones for long hours (even up to a few days! ) until the broth turns white. The broth is thick and creamy. They’re full of fats and collagen extracted from pork bone marrow and the cartilage. The fats give a punch of flavor, while both add body to the soup. You might not believe it, but the collagen in tonkotsu helps maintain the firmness of your skin ❤ (Ladies, Bon Appétit!)

Their Japanese chef hailing from Okinawa introduced a few strong flavors to their Tonkotsu mix : Black (Black garlic), Red (Spicy), Green (Basil), Yellow (Curry), Thunder (Extra Spicy) and White (Plain Tonkotsu). Each on it’s own or as a mix.

I would suggest to go for the Red and Black only as I find that their tonkotsu broth pretty watery and slightly plain in flavor. The other flavors on the other hand, overpowers the delicate pork aroma. I would also not recommend getting their tsukemen as their tonkotsu broth is runny. The black broth is very garlicky and compliments their broth very well.Their spicy Red flavor is my usual go to soup base.If you’re not a fan of spicy food, you might want to opt out instead.

Then comes the noodle choices, Shishido serves a default thin ramen noodle for soup-based ramen and thick ramen noodles for tsukemen (dip noodle). I personally find their thin noodle get soggy very quickly in the soup so I always request for their thick noodles and for it to be cooked firmer. The thicker noodle absorbs the flavor of the broth and gives a nice springy texture.Please request for the thick ones if possible, for both ramen and tsukemen. Also,there are no extra charges for upsizing your noodles. (small or large, same price!)

The showstopper at Menya Shishido is their Kakuni Pork belly, or as they call it, Yaki Buta (Roasted Pork belly). The whole slab of pork belly is nicely seasoned, braised and then roasted to a mouth watering golden-brown.The meat is tender and juicy and the fat melts in your mouth. MELTS. If you’re a pork belly lover, please take my advice and order the whole slab as a side dish and enjoy that sinful piece of umami.

Compared to their heavenly pork belly, their chasiu is just average but they do give a generous amount of meat in each bowl.

The half-boiled eggs (Ajitama) however, is are inconsistent. I had a fully cooked egg once but most of the time I can’t really tell if the egg is seasoned or not. So, if you’re on a budget, I do suggest to skip the egg.

Overall, it’s a decent place to get a proper bowl of tonkotsu ramen and will go just for the pork belly.

Flavoring : Not too spicy/salty can taste the sweet pork broth.

Special : Pork Belly x3 !!!! They provide spicy powder and fried chopped garlic. Their gyoza is pretty good too.

Price : Basic ramen is around RM23, the special one can go up to RM40. You can ask for an upsize for free.
