Recipe: High Protein Pumpkin Pancakes

Through trial and error, I’ve finally come up with a great high protein pumpkin pancake recipe – without protein powder!

Ingredients (makes 4 small pancakes):

  • 40g ground oats
  • 30g Greek yoghurt
  • 1 whole egg
  • 50g pumpkin purée
  • 25g powdered peanut butter ( I use PB2)
  • 1 teaspoon of baking powder
  • Splash of almond milk

The method is simple, combine all the ingredients in a bowl, and add a spoonful of mixture to a low heated pan. Flip when you see small bubbles forming in the pancake.

These are also great to make the night before and have them on the go!
