These decadent chocolate cookies are delicately coated with old-fashioned rolled oats. They are made from scratch in 30 minutes and require minimal pantry ingredients. This cookie dough is quick and easy to prepare, all by hand in one bowl. The chilled dough makes the balls easy to form and roll in the oats before placing them on the cookie sheet. With a soft and buttery crumb, they are lightly sweetened with vanilla and rolled with crunchy oats. These chocolate oatmeal cookies make a delightful breakfast, snack or afternoon sweet treat when paired with a coffee or tea.
