Before joining the Parc 55 team, one of Hilton’s hotel properties located in bustling downtown San Francisco, Sous Chef Simon brought nearly 20 years of experience preparing food at other hotels and an Italian restaurant in the city. In this Work Hero post, Simon shares his favorite meal to cook, and the pride he takes in making sure the hotel’s breakfast banquet always looks (and tastes!) impeccable.

What is your job here and how long have you been on the team?
I’m a sous chef. I’ve worked here for five years.

Do you live here in the city?
I’ve been living here in San Francisco for more than 30 years. Before working here, I was at another hotel in the city, and before that, I worked for 15 years in an Italian restaurant.

What are your day-to-day responsibilities?

I take care of the banquet in the hotel restaurant, making sure it looks good for our guests, and ensure food quality.

What’s your favorite part of your job?

Making the line look good for customers! I like preparing the breakfast here.

How about the people you work with? Does anyone inspire you?

It’s a great team. Everybody helps and works together. Everybody helps each other; there are truly great people working here.

What motivates you to come to work each day?

Everyone is so nice here. My manager, Mary, is especially great.

Do you have a favorite memory or story you would like to share?
I’ve worked at a couple of hotels in the city, but this one is the most interesting because the hotel is so clean and the people working here are so nice.

Do you have a favorite meal that you like to cook for hotel guests?
I would say dinner. I also enjoy preparing the breakfast line; we can make eggs benedict and omelets that are over-easy — we can do it all. We also accommodate special requests, like gluten-free or vegetarian food.

What do you appreciate most about your team?

Everyone is really helpful. Parc 55 is like a family. I appreciate everyone!
