When you think of a British summer you envision a beer garden and a big old pitcher of Pimms. What if I could tempt you with an even better vision? They do say if it’s not broken don’t fix it, but what about improving? Think getting bevved up with your mates in the sun, while sipping on something that not only tastes fantastic but makes you feel very merry indeed. If you’re a fan of fruit and alcohol and want to shake up your go-to summer drink, then I’ve got just the thing for you.

You will need:

Echo Falls Summer Berries Vodka

Pink champagne of your choice

Pink lemonade

Raspberries

This Spring Echo Falls came out with their new Vodka inspired by their ever so popular (and my fresher pre-drink of choice) summer fruit wines. This vodka is the foundation and the piece de resistance of this ‘Best Summer Drink’ recipe. Retailing at a very modest £16 at Tesco it is not only a fruitier, but cheaper alternative to Absolut Raspberry. More fruit flavours for less money? That’s a win in my eyes. Be it cocktails, simple vodka lemonade mix or shots, this Vodka can do it all. Don’t be put off by the fruity flavour, it is still the standard 37.5%, so you’re not substituting potency for flavour. You’re not substituting quantity either, it comes in your standard 70cl bottle.

This recipe is simple, but don’t underestimate it. First, empty the raspberries into a pitcher and crush them up slightly. Now, here comes the fun part. Empty half of the bottle of Echo Falls Summer Berries Vodka (yes half, trust me) and give it a good mix. Then add approximately half of the bottle of champagne and finish off with as much pink lemonade as desired. Play it by ear, give it a taste and see if you need to add more of anything. When I made this, initially I only poured in around a quarter of the bottle of vodka, and then after tasting realised it wasn’t enough. The Echo Falls Summer Berries vodka adds so much taste and flavour into the drink; it really is the be all and end all of the drink. In the end you should be left with a drink that is not only got a healthy amount of alcohol in it but also tastes delicious.

Whether you follow this recipe, or you just do a couple of shots before a night out, this vodka has you covered for every occasion. For only £16 it’s worth a try. So, bottoms up!
