Chocolate Muffin Recipe
I’ve obviously been on a bit of a muffin Kick. Here is a recipe from last time.
GLUTEN FREE OATMEAL AND CHOCOLATE MUFFINS
These were some pretty healthy muffins and I had them as snacks for a whole week. However, today’s recipe has nothing to do with health or fitness. It’s all about decadence and being very naughty. I’ve been really good this week. I’ve been to the gym, I’ve been eating clean so I think the weekend is gonna need a bit of a treat. And that means CHOCOLATE MUFFINS!!!
One of the reasons why I started this blog was to try out new things and push myself as a self taught cook. But the other reason was that I wanted to let people know just how easy it was to make your own stuff. Not only is it easy, but it is ridiculously cheaper to make your own cake than buy one. and it tastes a whole lot better (Ok sometimes😉
Ingredients
-1/2 cup unsweetened cocoa powder
-3/4 cup all purpose flour
-1/2 tsp baking soda
-3/4 tsp baking powder
-1/4 tsp salt
-2 large eggs
-1/2 cup brown baking sugar
-1/2 cup white sugar
-1/3 cup vegetable oil
-2 tsp vanilla extract
-1/2 cup mala milk (You can use regular milk and add vinegar)
– 1 packet instant coffee
Directions
- Preheat your oven to 175 c and put your cupcake liners in your tray. You can also oil your cupcake tin instead.
- next step is to mix the dry and wet ingredients separately. Mix in the flour, cocoa, baking powder, baking soda, salt, instant coffee. In another bowl mix your eggs, oil, sugar,vanilla in a separate bowl.
- Mix half of the wet ingredients into the dry stuff and mix it up with half of the mala. Add the remainder of the liquids in and mix until it intergrated well
- spoon the batter into the tins halfway and bake for about 15 minutes. keep an eye on it to prevent burning. remove from the oven and let them cool before removing them from the tin.
This is ready for a hot cup of coffee.
There you go. Now let me just say that not every recipe here is gonna be super clean and healthy. Every once in a while we are allowed to treat ourselves. The only thing is moderation. Limit yourself to a muffin a day (ok lets be serious, you can have two).
