Classic Chocolate Chip Muffins

Muffins are the easiest thing to bake in the kitchen. Unless you royally screw up, you can never go wrong making them. All you need is a simple classic recipe that you can use and top it off with any toppings you want. This Classic Chocolate Chip Muffins recipe is perfect. You can use chocolate chips, nuts, or dried fruit with this recipe. it only takes about 30 minutes from start to finish. 10 minutes of mixings and 20 minutes to bake. In 30 minutes you can have these Classic Chocolate Chip Muffins on the table for breakfast.

Ingredients

  • 2 medium eggs
  • 125ml/1/2 a cup of vegetable oil
  • 250ml / 1 cup of milk
  • 200g/ I cup of sugar.(you can add even less sugar if you want to cut down on sugar)
  • 400g /2 and 1/2 cups self-raising flour (or same quantity plain flour and 3 tsp baking powder)
  • 1 tsp salt
  • 100g chocolate chips or dried fruit such as sultanas or dried cherries

Method

  1. Heat oven to 200C/180C . Line 2 muffin trays with paper muffin cases.This recipe makes about 20–22 muffins. You can also just oil your baking tray if you do not have muffin cups.
  2. In a large bowl beat the eggs lightly with a handheld electric mixer for 1 min or you can use a whisk or fork. Add the oil and milk and beat until just combined then add the sugar and whisk until you have a smooth batter.
  3. Sift in the flour and salt (and baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough. Stir in the chocolate chips or dried fruit if using.
  4. Fill muffin cases two-thirds full and bake for 20–25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
  5. Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

These muffins are definitely healthier than any you can buy in the supermarket because there is no artificial additive you can’t pronounce.

Each muffin contain 121 calories, 13 grams of carbohydrates, 2 grams of protein. Depending on how may calories you can eat in a day, you can safely have two of these and still be within your macros. remember, moderation is key and keep track of how many calories you eat, and carb and protein intake is also every important.
