Taste Le Tour — Stage 14: Apple Fritters
I feel very privileged about what I can eat.
I certainly don’t mean the calories, I mean the food that I can access and afford — things like cooking a gourmet French meal every day for 21 days.
Even when I think there is no food in the house, the fridge, freezer and pantry still store an abundance of food. I’m fortunate to never worry about where my next meal is coming from (unless my boyfriend is cooking!)
Because of this, I can cook and eat things like apple fritters, that have little nutritional value but are pure indulgence.
If you are active on social media you may have seen recent food photos tagged with #mealforameal.
This hashtag refers to a campaign by Virgin Mobile and OzHarvest where people tweet or instagram pictures of food and label them with #mealforameal. In return, OzHarvest provides a meal to those in need.
OzHarvest redistributes food that would usually go to waste, to those who need it most — like bakery leftovers at the end of the day.
Knowing that sharing a photo of these apple fritters would help ease someone’s hunger, I felt better about making this frivolous fried food.
This dish is simple to make, but you need to decipher the recipe first. There were a couple of amendments to the recipe that I would suggest, such as putting your oil on to heat before you start the rest of the preparation.
The ingredient list calls for one egg, but in the method the recipe refers to the egg yolks and egg whites. I assume this was an editing oversight because I made it with only one egg and it seemed to work.
The batter is made with yeast, flour, eggs and milk, with a stiffly beaten egg white mixed in. Apple rings are dipped into the batter and then deep fried.
I was disappointed that the only part of these fritters that were crispy were the little bits of excess batter. But they were delicious nevertheless with the batter encasing warm, softly cooked apple. Sprinkle with sugar and cinnamon before eating.
