Chicken Nuggets with Lemon Myrtle Recipe

This recipe is a family favourite at my house!

I’m pleased to say that I came up with this recipe all by myself. The whole family rushes to the table when I serve it up and that’s after they beg to taste test as soon as the frying pan starts sizzling.

Lemon Myrtle is an Australian subtropical rainforest tree which has been used in cooking and medicine for thousands of years. The tree itself is lovely, lush, green and a great garden tree. The aromatic foliage can be used to make tea, as well as sweet and savoury dishes.

Ingredients

• 1 Kilogram Chicken breasts sliced into nuggets

• 2/3 cup Plain Flour

• 1 tablespoon dried Lemon Myrtle leaves

• 2 cups Panko bread crumbs

• 3 Eggs

  • Lemon Myrtle Infused Olive Oil for frying (recipe here, but you can substitute normal Olive Oil)

Method

  1. Mix together the plain flour and dried Lemon Myrtle leaves in a bowl.
  2. Whisk eggs until yolk is well combined with the white.
  3. Place bread crumbs into a bowl.
  4. Coat slices (nuggets) of chicken breast generously in flour mixture, then egg, then bread crumbs.
