Recipe for a cold drink with pandan, lemongrass, butterfly pea, ginger and honey

Ingredients

* 4 pandan leaves, torn into strips
* 2 stalks lemongrass, bruised
* 1/4 cup dried butterfly pea flowers
* 2 slices ginger, peeled
* 1 cup water
* 1–2 tablespoons honey, to taste
* Lemon or lime wedges, for garnish
* Ice cubes

Instructions

1. In a medium saucepan, combine the pandan leaves, lemongrass, butterfly pea flowers, ginger, and water. Bring to a boil over medium heat.
2. Once boiling, reduce the heat to low and simmer for 15 minutes, or until the flavors have infused into the water.
3. Remove from the heat and strain the tea into a pitcher or bowl. Discard the solids.
4. Stir in the honey until dissolved.
5. Refrigerate for at least 1 hour, or until well chilled.
6. To serve, pour the tea over ice in a glass. Garnish with a lemon or lime wedge and serve immediately.

Tips

* For a more vibrant blue color, add a squeeze of lemon or lime juice to the tea before serving.
* You can also add other fruits and herbs to the tea, such as mint, basil, or pineapple.
* If you don’t have honey, you can use another sweetener, such as sugar or maple syrup.
* To make a large batch of tea, simply double or triple the ingredients.
