Maple syrup is precious. Not only because it is expensive, but because it is tree-blood. Maple trees tell their little saplings scary stories about us—the tree-vampires.
I’ve come to sap your blood!
If you haven’t made maple syrup before, it is pretty incredible. Most people don’t realize that it is just tree sap. That’s it. It’s just concentrated by boiling it down (roughly 50L of maple sap makes about 1L of syrup), which needs to be done outside, over a fire, to get that smokey flavour. How do you extract the sap? You just hammer a little spile into the bark (during spring thaw when the tree is waking up) and hang a bucket under the spout. Collect the sap from the bucket once a day, strain out all the bugs (they like sap too), and boil it down. Just don’t spill it all over the inside of your refrigerator.
