A homemade salsa. Chicken thighs. Feta. Sauted veggies. All in a taco. Um…yum.
Ingredients:5 boneless, skinless chicken thighs, cut in bite sized pieces
Mmm. I love a good veggie taco. If you get a good char on the kale when you first put it into a hot pan, then it gives a smoky flavor to the whole dish. The carrots bring just enough spice that you don’t even need any salsa.
Tacos are also another pleasure of mine. Whenever we make homemade tacos, I always say, “Ok, I am only going to eat four,” but that usually turns into several more. And you can’t beat homemade corn tortillas!
