Recipe 38: Ice Cream Cookie Sandwiches
Perfect for Christmas or Whenever
This is one of the many recipes that Aaron and I want to share with you. We are overjoyed for you to come with us on our journey as we put together different concoctions and laugh together (all while hoping to not burn our apartment down). What You’ll Need
- Chocolate Chip Cookie Mix (and all ingredients that your mix calls for — usually calls for oil, eggs, and water)*
- Ice Cream (Chocolate, Vanilla, or your favorite flavor!)
- Saran Wrap
- Baking Sheet
- Cooking Spray
*Because of dietary needs, we used a Gluten Free Chocolate Chip Cookie Mix
How We Did It
Preheat oven to designated heat on the back of your box of cookie mix.
Mix cookies according to the packaging.
Roll cookie dough into 2 inch balls and place on greased cookie sheet, at least 3 inches apart from each other.
Bake cookies according to packaging.
Take out of the oven when done, set aside, and let cool completely.
Once cookies are completely cooled, place them in the freezer for at least 20 minutes.
Once cookies have sat in the freezer for at least 20 minutes, dollop ice cream on one side of the cookie. Place another cookie on the other side, making a sandwich.
Wrap ice cream sandwich in Saran Wrap and place in freezer — this will assure that they stay firmly together and not slide apart.
Let them sit in the freezer for at least another hour.
When you’re ready to eat them, unwrap the sandwiches.
Serve and enjoy!
NOTE: These are great for sharing — if one is too much for one person, they cut in half very easily.
