Vegan soda bread

Quick. No yeast. Whole grain. So good.

This is my first 100% wholegrain vegan bread. And guess what I used the peanut milk yogurt to make it, was so nervous about the output. Also, when I am trying something new, the biggest fear is wastage. That’s why I baked a really small one. But, it’s soft and crumbly and it’s yum! And, I didn’t have a small bread mould, the cake tin did the job.

The commercial breads have so many additives, plus the plastic packaging is non-recyclable. So why not have some fun baking a wholesome nutritious bread that doesn’t take too much time or effort. Here I am making it easier for you to bake this whole grain, seeded, super healthy and quick bread.

So breads need an agent to rise and we are using soda here to do the job Here’s a hack — you can use original eno as well. Also to activate the baking soda you need something sour, so always use it with the combination of lemon juice or vinegar. Not everyone shares these secrets ;)

THINGS YOU NEED

1 cup whole wheat flour
1/4th cup rice flour
1/4th cup millet flour (Try buckwheat flour if you don’t have millet flour)
2 tbsp flax seed meal
1/8th cup maple syrup/liquid jaggery
1 cup buttermilk (I used peanut yogurt buttermilk)
2 pinches salt
1 tbsp vinegar (use 1/2 tsp if the buttermilk is sour)
3/4th tsp baking soda

Tip: Adding some herbs like rosemary & thyme is a great idea, it masks the smell of soda.

HOW TO MAKE?

  1. Pre-heat oven at 150 degree celsius. You need to put the mould into the oven the moment you add the batter to it.

2. Sieve all the dry ingredients together.

3. Mix all the wet ingredients separately.

4. Add in the wet mixture to the flour mix, and keep folding in slowly. Do not over mix.

5. Transfer it to a 5 inch mould that’s generously greased (You seriously don’t need parchment paper, you can totally avoid generating that waste)

6. Bake it for about 25 minutes. Check the bread by inserting a toothpick or a knife, if it comes out clean it’s ready. If not, bake it for a few more minutes.

Gobble it up with your favourite spread. I use cashew milk discards to make a yummy spread. Remember no waste. Would you like to know the rcipe? Comment and let me know.
