As I have mentioned before, we Japanese love to eat many kinds of fresh fish as sashimi. Among them, these two ingredients are most desired and expensive. The meat of ise-ebi is soft and sweet. The miso soup made from shrimp heads is very flavorful as it has a rich umami taste, and is similar in taste to Sauce Américaine, a French lobster sauce. Awabi has a crispy texture. The more you eat, the more you feel the taste of the sea. Its liver tastes bitter and goes perfectly with sake.
