Blueberry Lemon Pancakes

I don’t always have time to have a homemade delicious breakfast, but when I do I go all out. Pancakes are one of my go-to breakfasts (of course, when I cook breakfast) because it’s fast, it’s easy, and it’s delicious! If you don’t get the joke, read my blog about yogurt breakfast bowls.

The best part about this pancake recipe is that you get to use your favorite pancake mix! I love Aunt Jamima pancakes but, of course, I always add a twist to everything.

Blueberry Lemon Pancake Ingredients:

2 cups Aunt Jamima pancake mix (or your favorite pancake mix)

1 1/2 cups water

16 ounces of fresh blueberries

1 whole lemon (zest and juice)

1 tablespoon of lime juice

1 teaspoon of vanilla

Directions:

  1. Add pancake mix to a large bowl with vanilla, lemon zest, lemon juice, lime juice, and water. Mix until just incorporated.
  2. Fold in blueberries as not to over mix. You do not want dense pancakes so make sure you do not overdo the mixing.
  3. Add a tablespoon of butter to your pan and melt on medium-high heat. Add as much or as little pancake mixture as you want. Cook until the top starts to bubble and flip. Note: Make sure your heat is not too high so that you do not burn the pancakes.

4. Repeat for the remainder of the pancake mixture. Serve with warm Aunt Jamima or maple syrup. Note: Don’t worry about getting the perfect circular pancakes.
