Savory Pancake

And you thought potato pancakes were filling! And you never knew that a pancake recipe could go into the Pizza section of a cookbook.

The Savory Pancake is made with the same process as the Pulp Pizza Crust (reference that recipe to make the batter for this one), only a) you’re going to pan fry it instead, and b) you’re going to change up the ingredients, which can be anything that generates pulp but for this recipe, let’s switch out the broccoli and cauliflower for:

Zucchini
Green bell peppers
2 tbsp garlic (or other) flavored extra virgin olive oil
1 tsp grated vegan parmesan cheese per small pancake
Makes many servings, depending on how large you make the pancakes, or how much pulp you need to turn into pancakes.

Heat the oil in a skillet at medium low heat.

Remove any long unpulped pieces that were too stubborn to get juiced properly from the batter. Sculpt the batter into smaller balls and from there, into smaller discs that roughly resemble a pancake.

Place them into the skillet one at a time, and immediately scooch it around and flip over with the spatula, so that the oil evenly coats both sides right away (otherwise one side will absorb too much of the oil too fast).

Use the spatula to smoosh the pancake to a reasonable thickness. Cook on the skillet until browned enough and it makes you think it’s a pancake, ~5 minutes per cake.

As a final flourish, add the grated vegan parmesan cheese to each side, cooking each side for half a minute to get the cheese heated and settled into the surface. Alternatively, you can mix the grated parmesan cheese into the batter itself so that its taste carries through the whole pancake, rather than treating it as a surface phenomenon.

If your first pancakes don’t hold their round shape (as you get used to varying the ratios to your heat levels etc.), that’s ok. Just treat them more like green hash browns, as they are still yummy. As they say in the comics, “Hulk smash green eggs and ham!”

Do not smother sour cream or maple syrup on top of them, as that would defeat the point of making these.
