This is a lot of food! I often cannot finish a whole plate. When I’ve eaten all I can, I cover the plate and then snack away at it throughout the day.

Experimental Charcuterie

The inclusion of honey and cheese should strongly suggest that this meal is better for a cheat day if you have weight loss goals. And charcuterie without honey and cheese, well, it just ain’t.

Lightly boil 3 cups of water in a small saucepan, and add the marmite to it, stirring so it dissolves. Add the seitan to the saucepan, reduce to a simmer, and let it simmer there for 30 minutes. The marmite will impart umami and salty flavors to the seitan, allowing you to pretend that it is like cured meats from Italy. You can modulate the marmite flavor by experimenting with marinades for the seitan.

Olives look cool next to a Polish crystal shot glass with toothpicks inside. And it goes without saying: eat this with wine if you drink wine.

TVP Zucchini Hash

Rehydrate the TVP according to the instructions on the package. With TVP, it can be a bit difficult to gauge the amount to dehydrate relative to the actual amount you will end up using, so make a little extra as you can always find a use for any leftover dehydrated TVP since it easily takes the place of ground beef. If you end up with extra dehydrated TVP, see my TVP Ground Beef in Coffee recipe, which doesn’t exist.

This hash stubbornly refuses to change color as it cooks, so it can be a bit difficult to tell when it’s done. Essentially, you’ll get the feeling that the food is looking back up at you and telepathically says,“That’s enough, now, we give up.” You can confirm your cooking intuition by doing a little taste and checking for a ground beef hash type of experience.

Garnish with hot sauce. This is also a great regular breakfast for those with weight loss goals.

Tofu Kimchi

Move the sautéed kimchi onto a dish and just lay the tofu slices on top, that’s it! Then practice your chopstick skills.

The Marco Polo

It looks like a panini but eats like a lasagna — the Marco Polo bridges the Mediterranean and classical Far East with its globe trotting logic. Or is it an illogic?

Magic Batter

There are at least three things that are magical about Magic Batter:

1: Anything goes! Or at least, anything that can go into a food processor :)

2: Thus, you get to draw on the magic of your imagination — what will you create with the great freedom and latitude afforded by ye olde food processor contraption?

3: So long as you put great ingredients into it, it will do magic for your body’s health and well-being.

Magic Batter is this book’s vegan mystery meat, in other words, a combo of protein and veggie matter that you can do meatloafy things with, like, well, make meatloaf, air fried meatballs, stuffed peppers filling, or shape into a pattie and saute for burger delivery format (geometric integrity willing), and so on.

Remember that green bell peppers have the lowest carb content of the bell pepper family, in case you are tempted by all the other colors they come in.

Surprise, green peppers come in irregular shapes and sizes, so this recipe requires some on-site assessment of spatial volumes and geometries. You want to hand select green peppers at the produce bin, making sure that the ones you pick have relatively flat bottoms so that they do not tip over or lean into each other when baking them.
