Cauliflower Rice Pudding Recipe

Hold on, cauliflower what now?!

Yeah, it sounds weird — who would ever think of using cauliflower in a sweet dessert or breakfast style recipe?

Cauliflower is incredibly good for you (check out the health benefits of cauliflower in this post), but it’s not the most inspiring of vegetables. No bright colours, no stand out flavours, it’s a background vegetable at best.

Until today.

This recipe caused chaos at My Muscle Chef HQ when we first put it together, that’s how good it is. As far as recipes go, it ticks all the boxes — no cooking, only four ingredients needed, and everything can be found at your local supermarket.

Cauliflower Rice Pudding Recipe

Cauliflower Rice Pudding Ingredients (Serves 4)

  • Vanilla Protein Powder (2 Scoops)
  • Cauliflower (approx 200g)
  • Cacao Nibs (100g)
  • Vanilla Yoghurt (500g)

Step One: Rice the cauliflower

Chop your cauliflower into smaller chunks so it all fits into your blender/food processor.

Blend blend blend, stopping to scrape down the sides a couple of times, until it’s all about the same size — it should look a bit like wet rice.

Step Two: Mix it up

Get all the cauliflower ‘rice’ into a big bowl, add the rest of the ingredients (vanilla yoghurt, cacao nibs, and vanilla protein powder) then mix it by hand until the protein powder is fully mixed in and cauliflower ‘rice’ is coated completely with the mixture.

Step Three: Worth the wait!

Now for the hardest part of the recipe — leaving the mixture overnight! It can be eaten right away, but tastes best once everything has had a chance to settle in together.

Pop it into sealed containers & chuck it in the fridge, ready to grab and go the next day — ENJOY!

Variations Of The Cauliflower Rice Pudding Recipe

One of the great things about this recipe is how easily you can adapt it to suit your specific dietary needs or preferences.

Dairy free/vegan variation

Use coconut yoghurt and plant based protein powder for a vegan friendly option. In fact, the original recipe was made with coconut yoghurt so even if you eat dairy coconut yoghurt is highly recommended!

Other flavours?

Cacao nibs combined with the vanilla in the protein powder and yoghurt are what give this dish a cookie dough flavour. Update the taste by using unflavoured yoghurt & your preferred flavour of protein powder, add a spoonful or two of nut butter, or swap the cacao nibs for some dried fruit (dried blueberries are a great idea!)
