Rava Kesari bhath (Sooji halwa) or commonly known as “Sheera” in Udupi - Karnataka , is a mouth watering sweet recipe made with rava (semolina), sugar and ghee.

Rava Kesari is a very popular breakfast in Karnataka served along with Khara bhath (Upma). The combination of khara bhath and rava kesari is known as Chow-Chow bhath.

Kesari bath is quick to prepare and it takes around 15–20 minutes. It can be served with breakfast or as a sweet snacks or as a dessert.

Servings: Serves 2–3

Ingredients:

1 cup rava or sooji

1 cup sugar

2 ½ cup water

½ cup ghee

½ teaspoon cardamom powder

A pinch of yellow food color or 4-5 saffron thread

Few cashews and raisins

Method:

  1. In a vessel, add 2 ½ cup of water and bring it to a boil. (You can add saffron threads in boiling water)
  2. In this meantime, heat 2 tsp of ghee in a frying pan or kadhai. Add cashews & raisins and fry them until golden brown and keep it aside.
  3. In the same kadhai, heat the remaining ghee and add rava/ sooji. Roast the rava on low flame till they are fragrant and turn light golden in color. Do not over roast the rava.
  4. Once the rava is roasted, carefully & slowly, add boiling water and keep stirring continuously till the rava has absorbed all the water and no lumps remain. Let the rava cook on low flame for around 2 minutes.
  5. Now add sugar and keep stirring the whole mixture for 2–3 minutes.
  6. Add cardamom powder, yellow food color and continue stirring till the ghee starts to separate from the sides.
  7. Finally, add roasted cashews & raisins. Mix well and it is ready to taste.
  8. Turn off the flame and transfer the kesari bhath to a serving bowl.
  9. Enjoy the delicious Rava kesari bhath with your breakfast or as a dessert.

Note:

  • You can add more ghee, if you want the kesari bhath much more tasty.
  • Adjusting the sugar amount is your wish.
  • Make sure you have followed the same measurement. Or else it will become sticky and thick.
