The French Laundry

With 3 Michelin stars and being what Anthony Bourdain calls "The best restaurant in the world. Period," the French Laundry is a much sought after bucket list restaurant in Yountville - just up the valley from Napa.

This means its virtually impossible to get a reservation. The reservation line is open for tables 60 days before the dining date but don't even bother to call. Better, try to grab one of the three table available daily on OpenTable. But the best strategy for grabbing an elusive seat is to call your credit card concierge (think American Express Platinum card). They can frequently hook you up - just be sure to give them more than 60 days notice.
