Homemade Refried Beans

Ingredients

  • 2 cups dry pinto beans
  • 8 cups water, more as needed
  • 1 whole onion
  • 1 tsp paprika
  • 1 tsp each garlic and onion powder
  • 1/2 tsp oregano and cumin
  • 2 tsp olive oil
  • 2 tsp salt or to taste

Directions

  1. Clean beans, remove stones.
  2. Rinse in strainer.
  3. Soak beans overnight in water covering beans by 2–3 inches. Drain.
  4. Place water, beans, and onion in large stockpot. Bring to boil, partially cover, and simmer until tender — roughly 90 minutes. Add water if needed.
  5. When finished, drain majority of liquid, keeping beans in pan. Discard or keep onion in, your choice.
  6. Add seasonings.
  7. On medium heat, mash with potato masher to desired consistency.
  8. Simmer, partially covered for 10–15 minutes, stirring occasionally. Turn off heat, add olive oil, and stir.
  9. Serve.

Topping options: diced fresh onion, cilantro, radishes, cabbage, tomatoes, and tomatillo salsa.
