Homemade Refried Beans

Ingredients
- 2 cups dry pinto beans
- 8 cups water, more as needed
- 1 whole onion
- 1 tsp paprika
- 1 tsp each garlic and onion powder
- 1/2 tsp oregano and cumin
- 2 tsp olive oil
- 2 tsp salt or to taste
Directions
- Clean beans, remove stones.
- Rinse in strainer.
- Soak beans overnight in water covering beans by 2–3 inches. Drain.
- Place water, beans, and onion in large stockpot. Bring to boil, partially cover, and simmer until tender — roughly 90 minutes. Add water if needed.
- When finished, drain majority of liquid, keeping beans in pan. Discard or keep onion in, your choice.
- Add seasonings.
- On medium heat, mash with potato masher to desired consistency.
- Simmer, partially covered for 10–15 minutes, stirring occasionally. Turn off heat, add olive oil, and stir.
- Serve.
Topping options: diced fresh onion, cilantro, radishes, cabbage, tomatoes, and tomatillo salsa.
