Tacos

Vegan tacos

Get some blue corn tacos, heat them for 20 secs in a pan (no oil). Fill with any of the following

Corn chowder

Super quick sweetcorn soup

Serves 2

In a pot, bring to boil (simmer for 15–30 mins)

• 1 can sweetcorn (normal size)
• 1 red onion roughtly diced
• 1 clove garlic minced

Kale stew

(For two to three)

Toast

• 1 tsp onion seeds
• 1 tsp caraway seeds
• 1 tsp fennel seeds
• quarter ancho chili

Blend

• 2 cup tomatoes

Pappardelle with Mushroom Sauce

Vegan pasta for two

Fry in oil until glassy

• 2 bannana shallots thinly choppeed
• 2 cloves garlic minced
• bunch thyme
• bunch sage

Fried aubergines

Another ‘Indian’ curry

Chop 2 egpplant into mouth-sized chunks. (Serves 2).

Fry eggplant in a wok stye plan with coconut oil until golden and well done (consider adding a lid for a bit).

Fried Dahl

Just fried Dahl, no magic here… It is delicious though…
